GEOGRAPHICAL LOCATION: Mountain area in the Upper Minervois, between 200 and 450 meters above sea level.
GRAPE VARIETIES: Cinsault, Lledoner Pelut, Syrah.
TERROIR: Lacustrine limestone plateau for the Syrah, quaternary terraces of rounded pebbles for the Lledoner Pelut and the Cinsault.
VITICULTURE: Biodynamic and agroecological farming, with cover crops, gentle pruning, debudding, vine braiding, and treatments based on plants, herbal teas, fermented extracts, sulfur, essential oils, and just a touch of copper.
VINIFICATION: This wine is made without any additives — but with great care and attention.

TASTING NOTES & FOOD PAIRING:
Deep purple-red color with high intensity.
The nose offers fresh, crunchy aromas of red and black fruits such as strawberry, redcurrant, cherry, and blackcurrant.
The palate opens with freshness, where blackcurrant and redcurrant notes coat the mouth. The wine is round and smooth, with very supple tannins.
This wine pairs beautifully with stuffed tomatoes, poultry, raw or cooked vegetables, red meat, roasted butternut squash, charcuterie, fresh or aged cheeses, and fresh fruit. It is also delightful on its own as an aperitif.
