TERROIR: Lacustrine limestone plateaus between 250 and 300 meters altitude, karstic formations sculpted by water over time.
GRAPE VARIETIES:
Field-blended parcels — mainly Aramon, Ribayrenc, Piquepoul Noir, Cinsault, and Morrastel, co-planted with about thirty traditional varieties (Brun Fourca, Valdiguié, Marocain Noir, Alicante, Counoise, Terret, Castets, and others).
VITICULTURE: Biodynamic and agroecological farming with cover crops, gentle pruning, debudding, vine braiding, and treatments based on plants, herbal teas, fermented extracts, sulfur, essential oils, and just a touch of copper (total over 5 years: 4 kg).
VINIFICATION: No additives. Manual harvest, destemming, direct pressing for Morrastel, and short maceration (24 to 48 hours) for the other varieties. Gentle pressing (max. 1.5 bar).
Alcoholic and malolactic fermentations complete naturally in stainless steel after pressing.
AGEING: Stainless steel tank until spring.
