Karst 2023 – AOP Minervois Red

GEOGRAPHICAL LOCATION: Limestone plateau area between 250 and 300 meters above sea level.

GRAPE VARIETIES:
Field-blended vines — a mix of Grenache, Aramon, Cinsault, Ribayrenc, and Piquepoul Noir, co-planted with about twenty other traditional varieties (Terret, Aramon, Alicante, Morrastel, Castets, Counoise, etc.).

TERROIR: Degraded lacustrine limestone plateau, karstic in nature, with silica inclusions.

VITICULTURE: Biodynamic and agroecological farming with cover crops, gentle pruning, debudding, vine braiding, and treatments based on plants, herbal teas, fermented extracts, sulfur, essential oils, and just a touch of copper (total over 5 years: 4 kg).

VINIFICATION: No additives — only care and attention.

This wine is born from numerous micro-vinifications.
No pumps are used; everything is done manually, by tub and by bucket.
The vessels are filled by hand, with destemmed or whole clusters depending on the year and the mood of the harvest. After a variable but always short maceration (less than 10 days), pressing is carried out in a small traditional ratchet press.
The juice is then transferred by bucket into barrels, demi-muids, and stoneware jars. The barrels range from 4 to 15 years old to avoid any overt oak influence.
Both alcoholic and malolactic fermentations finish naturally in these vessels, after which winter soothes the wine. The final blending takes place in spring, once the wine awakens again.

AGEING: 6 months in stoneware jars, barrels, and demi-muids, followed by 3 months in stainless steel before bottling.
