Dark yet luminous vermeil. Beneath its fleshy armor, Les Plots stands firmly rooted in its terroir.
This telluric wine bears impressions of spice, fleeting flavors of black fruits and violet flowers, and the deep hue of blackcurrant aromas — even borrowing from other lands a totemic green-pepper note.
Full of supple generosity, its architecture — almost Romanesque — is adorned with harmony, never allowing its strength to become excessive nor its power to stray from aesthetic grace.

A demi-god in the pantheon of fine wines, Les Plots guards the memory of labor and reveals the mystery of the root alchemy that humanizes the mineral soul of our terroirs.

TERROIR: Mountain zone in the Upper Minervois. South and southwest-facing parcels between 200 and 350 meters above sea level. Stony slopes of white limestone, clay-limestone, deep clay, and “grésette” sandstone.

GRAPE VARIETIES: Syrah, Grenache, Cinsault.

VITICULTURE: Biodynamic and agroecological farming with cover crops, gentle pruning, debudding, vine braiding, and treatments based on plants, herbal teas, fermented extracts, sulfur, essential oils, and just a touch of copper (total over 5 years: 4 kg).

VINIFICATION: Manual harvest. Destemming. Gentle infusion without extraction for one week, soft pressing (max. 1.5 bar), completion of alcoholic and malolactic fermentations in the liquid phase in stainless steel tanks.

AGEING: Stainless steel tank, aged for one year.

TASTING NOTES:
A wine that combines power and aromatic complexity — candied fruits, spices, blackcurrant, and green pepper — with a fleshy texture and lively freshness.
