Its deep color announces texture, while its brilliance speaks of vivacity.
Aromas of quince and honeyed blossoms accompany a broad, expressive palate; notes of heather and tobacco emerge in the vintages born from our capricious parcel of schist.
It does not favor shellfish, but pairs beautifully with fish, raw-milk cheeses, aperitif moments, and the tender awakenings of intimate evenings.
TERROIR: Mountain area in the Upper Minervois. Parcels of red quartzite sandstone and schist at 400 meters altitude.
GRAPE VARIETY: Roussanne.
VITICULTURE: Biodynamic and agroecological farming with cover crops, gentle pruning, debudding, vine braiding, and treatments based on plants, herbal teas, fermented extracts, sulfur, essential oils, and just a touch of copper (total over 5 years: 4 kg).
VINIFICATION:
Manual harvest. Grapes are crushed but not destemmed, followed by gentle pressing (max. 1.5 bar). Light settling and temperature-controlled fermentation.
Depending on the vintage, part of the wine is fermented in seasoned demi-muids to soften the naturally sharp acidity of this cuvée.
AGEING: 4 to 6 months in stainless steel and demi-muids.
TASTING NOTES:
Between gold and straw in hue, its brilliance announces freshness.
The nose shows fine texture supported by lively acidity. The palate follows seamlessly — fresh, springlike notes unfolding in a long, graceful finish.
A wine that pairs beautifully with fish and goat cheese.
