Vertige 2022 Minervois Red

Bottle price: €26.00

Terroir: Mountain area of the Upper Minervois. Clay soils of varied colors and stony patches depending on the grape variety.

Grape varieties: 25% Grenache, 25% Syrah, 25% Carignan, 25% Cinsault.

Viticultural practices: Biodynamic and agroecological farming, natural grass cover, gentle pruning, shoot thinning, vine braiding. Treatments based on plants, fermented extracts, nettle tea, sulfur, essential oils, and just a touch of copper (total dose over five years: 4 kg).

Vinification: Manual harvest, destemming, and fermentation in terracotta jars (jarres). The cap is occasionally punched down by hand. Once both alcoholic and malolactic fermentations are complete, we block the cap in the middle of the jar and top up with finished wine. The jar is sealed to allow an infusion of the cap, whose duration varies with the vintage (3 to 5 months). The jar is then pressed manually with a small ratchet press when we decide the time is right. Bottling takes place before summer.

Aging: In terracotta jars under cap, then in stainless steel tanks until bottling.
