SITUATION GEOGRAPHIQUE : Zone de montagne dans le Haut Minervois, entre 200 et 350 mètres d’altitude.

CEPAGES : Cinsault, Grenache, Syrah.

TERROIR : Plateau battu par les vents, climat chaud et sec, sol de cailloutis calcaires pour le Grenache et le Cinsault, sol d’argiles pour la Syrah et le Mourvèdre, les sous-sol argileux garantissent une bonne alimentation hydrique.

PRATIQUE CULTURALE : Agriculture biologique et biodynamique, mise en avant de l’effet terroir par le travail du sol avec utilisation de compost et désherbage mécanique. Entretien de la faune et de la flore voisine pour maintenir un écosystème sain et bien vivant.

VINIFICATION : Ce vin est élaboré sans sulfites et sans levures ajoutés, mais avec beaucoup de soin et d’attention.

DEGUSTATION ET ACCORDS METS ET VINS : Robe rouge pourpre avec une forte intensité colorante, Nez de fruits noirs et de fruits rouges frais et croquants, tels que la fraise, la groseille, la cerise et le cassis. En attaque la bouche est fraîche, les arômes de cassis et de groseilles tapissent le palais. Le vin est rond avec des tanins très souples.

Ce vin s’accordera bien avec des tomates farcies, des volailles, des légumes crus ou cuits, de la viande rouge, du butternut rôti, de la charcuterie, des fromages frais ou secs et des fruits frais. Il conviendra également seul pour l’apéritif.
