Vermeil sombre mais brillant, sous sa carapace charnue, Les Plots est campé dans ses terroirs. Ce vin tellurique s’impressionne de tâches épicées, de fugaces saveurs de fruits noirs et de fleurs violettes, des couleurs de l’arôme de cassis, jusqu’à voler à d’autres sites le totémique trait végétal de poivron vert. Bien rempli de tendreté succulente, l’architecture (plutôt romane) s’enrobe d’apparats ne laissant jamais la force devenir excessive, ni la puissance s’égarer hors des chemins esthétiques.

 C’est un demi-dieu du panthéon des bons vins, gardien de la mémoire du travail, révélateur du mystère de l’alchimie racinaire qui humanise la minéralité des entrailles de nos terroirs.

 Terroir : Zone de montagne dans le Haut Minervois. Parcelles exposées Sud/Sud-Ouest. Entre 200 et 350 mètres d’altitude. Coteaux caillouteux, calcaire blanc, argilo-calcaire, argile profonde et grésette.

 Cépages : Syrah, Grenache, un peu de Carignan.

 Pratiques culturales : Dynamisation du sol et du sous-sol. Pratique de l’enherbement. Utilisation de compost.

 Vinification : Récolte manuelle. Eraflage/pigeage. Fermentation traditionnelle.

 Conservation : Cuve inox, 1 an d’élevage.

 Dégustation : Son expression allie la puissance et les caractères aromatiques complexes, fruits confits, notes d’épices, de cassis et de poivrons, bien en chair, une certaine matière avec de la vivacité.

This telluric wine is stained of spicies, fugitive red fruit touches, violette flowers, blackcurrant aroma colours, and steals to other places the totemic green pepper aroma. Well filled of delicious tenderness, the architecture is dressed with pageantry which never let the strength be too powerfull, nor going out of the aestethics paths.

 Its a demigod from the wine Pantheon, keeper of the work memory, it reveals the mystery of roots alchimy that humanizes our terroir minerality.

 Terroir : Mountain area in High-Minervois. South/South-West exposed plots. Between 200 and 350m of altitude. Rocky uplands, white limestone, clay-limestone, profound clays.

 Grapes : Syrah, Grenache, A little touch of Carrignan.
