Frémillant 2021 Minervois Rosé

Il s’immisce, s’amuse des papilles endormies, il taquine le nerf trijumeau et émoustille les outils sensoriels les plus engourdis, et explose longtemps, longtemps, comme un beau feu d’artifice de 14 Juillet.

 Vif et tendre, fruité et structuré, c’est un séducteur qui ne fait pas dans l’éphémère. Nul besoin de mets pour se verser un filet de ce rosé prononcé de brillance. Il fera aussi le succès des assiettes de charcuterie et donnera aux volailles fermières un apparat de fête.

 Terroir : Zone de montagne dans le Haut Minervois. Parcelles exposées Sud/Sud-Ouest. Entre 200 et 350 mètres d’altitude. Sol argilo-calcaire (Cinsault), siliceux (Grenache), Schistes d’altitude (Syrah), Carbonifères (Mourvèdre).

 Cépages : Mourvèdre, Grenache, Cinsault, Syrah.

 Pratiques Culturales : Dynamisation de la vie du sol et du sous-sol. Pratique de l’enherbement. Épandage de compost.

 Vinification : Vendange manuelle. Eraflage. Saignée de cuve (Syrah et Grenache) et pressurage direct (Mourvèdre et Cinsault). Fermentation à température contrôlée (16°C).

 Elevage : Cuve inox, 3 mois sur lies fines.

 Dégustation : Sa couleur légère, douce et brillante étonne et appelle la gourmandise. Le nez est fruité, frais, tandis que la bouche attaque avec vivacité sur le fruit, désaltérant. Un vin à boire dès à présent sur de la charcuterie, des tartes salées, parfait pour l’apéritif ou en milieu d’après-midi.
