Wine details

Discover the wine.

The grape's original name is used as a reminder of a distant time when knowledge was passed down through languages of great beauty.

The very sound of the name seems to mimic the playful grain of the tannins on the tongue. Its French ending, pronounced “xa”, suggests the bright flash of the wine's liveliness, while its original pronunciation, “cha”, lifts the soft velvet curtains to reveal its generous flesh. Deliberately powerful and charming, this androgynous wine hides the winter it spent resting in wood and stoneware in the family's old cellar. A little time in a decanter coaxes out a restrained bouquet of red and black fruits: redcurrants, blueberries, morello cherries and sloe liqueur. The harmony between fruit and tannin is delicate. Serving it too warm or opening it after a journey without allowing it to rest can upset that balance. Fine Bresse poultry or flavoursome Salers beef will show it at its best. Time will reward this wine over several years.

Terroir

Single-vineyard wine. A plot of shell-bearing lacustrine limestone at the site known as La Coquille, 400 m above sea level.

Grape Varieties

90% Grenache, 10% Syrah.

Vineyard Practices

Biodynamic and agroecological farming, ground cover, gentle pruning, shoot thinning, weaving vine shoots, and treatments based on plants, plant manure, fermented extracts, sulphur, essential oils and a little copper (4 kg total over five years).

Winemaking

Hand-picked, then destemmed. Gentle infusion in stainless steel for 7–10 days.

Pressed before alcoholic fermentation is complete; both free-run and press wines finish fermenting their sugars and malic acid in used 500-litre demi-muids and stoneware jars.

Everything is blended in April, once the wines have awakened with spring.

Ageing

Six months in demi-muids and stoneware jars, followed by three months in stainless steel before bottling.

Tasting Notes

Here Grenache offers a lovely expression dominated by the crisp character of fresh red fruit. Beautifully integrated with just the right amount of ageing, which adds coffee and chocolate notes, and given structure by a little Syrah, this wine is an ideal partner for gastronomic discoveries.
