An orange wine made by macerating white, grey and black grape varieties.
Limestone plateaux at an altitude of 250 m.
Field-blended vineyards: 80% from a Grenache Gris plot interplanted with fifteen varieties (Terret, Muscat, Macabeu, Clairette, Piquepoul, Aramon, etc.), and 20% Grenache Noir interplanted with ten varieties (Counoise, Morrastel, Piquepoul, Cinsault, Alicante, etc.).
Weathered, karstic lacustrine limestone plateau.
Biodynamic and agroecological farming, ground cover, gentle pruning, shoot thinning, weaving vine shoots, and treatments based on plants, plant manure, fermented extracts, sulphur, essential oils and a little copper.
No additives, but a great deal of care and attention.
A skin-contact white wine. Most of the Grenache Gris is destemmed (80%); the remainder, together with the Grenache Noir, is added as whole bunches on top of the vat. After five to seven days of maceration in stainless steel, the grapes are pressed in a ratchet-operated vertical press. Free-run and press juices are transferred into stoneware jars to finish alcoholic and malolactic fermentations. Fermentation takes place at a cool temperature, generally around 18°C.
In stoneware jars until spring.
Orange! What a surprise! The colour is a swirl of extraordinary lightness. A playful graininess gives the wine a long, complex finish, with intriguing aromas. Experienced palates find saffron, candied orange and almond, alongside abundant citrus fruit, grapefruit and blood orange. Vivid, sound, fresh, spicy and slightly tannic, this wine pairs beautifully with boldly flavoured vegetables, cheeses and white meats.
