Terroir : Mountain area in High-Minervois. South/South-West exposed plots. Between 200 and 350m of altitude. Clay-limestone soil (Cinsault), Siliceous (Grenache), altitude schists (Syrah), Carboniferous (Mourvèdre).
Grapes : Mourvèdre, Grenache, Syrah, Cinsault.
Vinification : Manual harvest, Destemmed, tank bleeding (For Syrah and Grenache) and direct pressed (for Mourvèdre and Cinsault). Low temperature fermentation (16°C).
Ageing : Stainless steel, 3 months on fine lees.
Tasting : Its flamboyant color surprise and is a call to gluttony. The nose is fruity, fresh, while the mouth attacks with vivacity on fruit touches, quenching. A wine to drink right now on charcuterie, salted pies, perfect for aperitive or in the midle of the afternoon.
